Sydney’s sexiest nightspot, Zeta Bar is an opulent oasis in the heart of the city, filled with purple hues and dark wood tones. Featuring a breathtaking CBD rooftop terrace, Zeta reveals a unique viewpoint of the historical Queen Victoria Building and looks onto the length of George Street spanning down towards the harbour. A sleek oak wood island bar runs the length of the main room flooded in a deep red and purple glow from huge glass lamps. Behind the Bar
Grant Collins: Consultant/Mixologist
After a decade long career at some of the UK`s finest bars including Bank Restaurant and Zander Bar (where in 2000 he was awarded the coveted title of “UK Bar Manager Of The Year), Grant Collins is not only one of Sydney’s leading bartenders, but also one of the most highly regarded bar managers in Australia. Most recently Grant spent four years at Sydney’s Water Bar at W Hotel, where he led Water Bar to 23 industry awards including a ranking in Conde Nast Traveler’s “Top 10 Bars in the World” (2004) and wallpaper Magazine’s “Top Five Bars In The World” (2005). He also personally picked up “Australian Bar Manager Of The Year” at the 2003 and 2004 ALIA awards and was named one of the "World's Greatest Bartendars" by Travel and Leisure.

Brett Clarke: Bar Manager
Originally from the UK, Brett Clarke has over 9 years experience in the Hospitality industry and began as a bartender in 1998. Brett has worked at some of the UK’s leading innovative bars including TGI Fridays Crawley West Sussex, He was part of the opening team at Red Cube in Leicester Square in 2000-2001, then moved to Navajo Joe’s in Covent Garden where he became Head Bartender & Bar Supervisor. During this time, Brett was asked to go to Europe to set up and open a new hotel bar for Bar Breeze.co.uk and appeared in local magazines and on local television stations. Brett then moved back to London in 2002-2004 as Assistant Bar Manager at Roadhouse, arguably one of the most famous high volume flair bars in the world. Brett has a reputation for being one of London’s best bartenders and has completed freelance work for Bacardi, Smirnoff, and Squeeze. Arriving in Sydney, Australia 2004 he accepted the role as Bar Manager for Aqua Luna. Brett then opened Lenin Bar in Circular Quay and managed two other bars for the parent company - Bubble Champagne Lounge and Minus 5 Ice Lounge.

Manuel Prior: Operations Manager
Manuel Prior began bartending in his hometown of Rome, Italy over 12 years ago. In 1997 he moved to London, where he worked in various pubs and restaurants before moving on to the stylish OXO Tower in 2000. Manuel quickly moved through the ranks to become Bar Supervisor. He then went on to work as Head Bartender at various venues around London including bars such as Mint Bar and Smollensky’s in Canary Wharf. Manuel was also Bar Manager at Nic’s Bar in Angel and it was here that he was able to focus on his passion for Mixology. Nic’s bar went on to be awarded the “Best Cocktail Bar in North London” in 2004. In late 2004, Manuel arrived in Australia and began working at Aqua Luna, Circular Quay. The opening of Lenin Bar in Circular Quay saw Manuel take on the position of Head Bartender and later the position of Bar Manager at Lenin’s two new venues, Bubble Champagne Lounge and Minus 5 Ice Bar.
