pineapple & coriander martini

succulent pineapple pressed with pineapple syrup, freshly picked coriander leaves and tanqueray gin, a suggestion of  vanille de madagascar and spiked with lemon juice then finished with our very own zeta vanilla syrup

Experimental

Our ‘experimental’ section features some of the world’s most contemporary cocktail trends; such as ‘grilling’ fruit, deconstructing cocktails and the use of ‘foams’ and “airs”, using methods new to mixology as perfected by molecular gastronomic restaurants such as El Bulli.

bacon-infused & maple syrup manhattan

(inspired by PDTs, NYC superb old fashioned) we stir a large measure of smoky bacon infused bourbon with maple syrup and a dash of cherry syrup and sweet and dry vermouth

served straight up with a cherry garnish and a side of crisp bacon

 

pistachio & rockmelon martini

this radical flavour mix is a sublime fusion of sweet/sour & salty. we muddle fresh rockmelon with pineapple juice, ketel one vodka and melon liqueur, then top it with a rich creamy pistachio foam, accompanied by a refreshing palate cleansing serve of our home-made pistachio sorbet and a side of salty pistachios

Deconstructed

We also feature “deconstructed” cocktails where we dissect the flavour composites of cocktails and serve them platter style. With this experience we offer guests the chance to “reconstruct” the flavours on their palate.

a chilled martini glass is filled with fresh raspberries that have been ignited and flambéed with sugar, then shaken with home-made bitters, black raspberry liqueur and ketel one vodka, served with a side of fresh raspberries, ginger beer, fresh lime pieces, candied ginger and our home-made zeta fizz powder.

zeta prohibition iced tea with a screwdriver side

a throwback to prohibition times when many folk in the usa hid liquor in many creative ways. some stories say that to hide the liquor it was served to look like its non alchoholic partner the iced tea. another ingenious manner to import prohibited liquor was to inject oranges with vodka. legend has it this is how the term “screwdriver” came to fruition. we serve ours prohibition style with belvedere vodka, plymouth gin, cointreau and havana club light rum in jam jars and a brown paper bag and a side of belvedere injected orange.

Next is ‘forgotten classics’ a selection of the world’s most daring cocktail indulgences from the 1920s and 1930s, timeless creations resurrected  for the 21st century.

casino

this classic derives from harry johnson’s bartenders manual in 1882 and also features in the savoy cocktail book. gin with maraschino liqueur, freshly pressed lemon juice and oranges bitters shaken with cracked ice. served straight up, with a cherry in an antique martini glass.

 

ping pong

invented in 1930 at the savoy when bartenders felt that they played a better game of ping pong after a couple of these! sloe gin shaken violently with the juice of half a lemon and a hint of egg white. served straight up with a twist of lemon.

 
 
 

Tiki

The list climaxes with our ‘Tiki’ selection: a venture into Tiki cocktail culture with a Zeta twist. We feature some classics as well as some original Tiki recipes created by our mixologists in decadent Zeta style.

an equal measure of both pampero seleccion 1938 and havana club blanco, finely balanced with freshly squeezed lime, fixed with orange curacao, rock candy syrup and a touch of orgeat

served in a hollowed pineapple over cubed ice garnished with a cherry, mint, orange wedge and sparkler
