spiced agave margarita                                              

in this unique creation we produce our very own home-made spiced agave syrup and shake it explosively with reposado tequila, cointreau and freshly pressed lime juice

served straight up with a half chilli salt rim and garnished with a lime wheel and twist of black pepper

 

raspberry & lemongrass martini

raspberries shaken with ketel one vodka, gekkeikan sake, crème de framboise, finished with lemongrass syrup and lemon juice

Experimental

Our ‘experimental’ section features some of the world’s most contemporary cocktail trends; such as ‘grilling’ fruit, deconstructing cocktails and the use of ‘foams’ and “airs”, using methods new to mixology as perfected by molecular gastronomic restaurants such as El Bulli.

(inspired by PDTs, NYC superb old fashioned) we stir a large measure of smoky bacon infused bourbon with maple syrup and a dash of cherry syrup and sweet and dry vermouth

We also feature “deconstructed” cocktails where we dissect the flavour composites of cocktails and serve them platter style. With this experience we offer guests the chance to “reconstruct” the flavours on their palate.

zeta prohibition iced tea with a screwdriver side

a throwback to prohibition times when many folk in the usa hid liquor in many creative ways. some stories say that to hide the liquor it was served to look like its non alchoholic partner the iced tea. another ingenious manner to import prohibited liquor was to inject oranges with vodka. legend has it this is how the term “screwdriver” came to fruition. we serve ours prohibition style with belvedere vodka, plymouth gin, cointreau and havana club light rum in jam jars and a brown paper bag and a side of belvedere injected orange.

Next is ‘forgotten classics’ a selection of the world’s most daring cocktail indulgences from the 1920s and 1930s, timeless creations resurrected  for the 21st century.

(as Crockett Waldorf Astoria version) 

a classic from the waldorf astoria in NYC, we slightly modernize this splendid imbibe by stirring a healthy measure of rye whiskey and sweet vermouth with a dash of absinth and bitters.

invented in 1930 at the savoy when bartenders felt that they played a better game of ping pong after a couple of these! sloe gin shaken violently with the juice of half a lemon and a hint of egg white. served straight up with a twist of lemon.

 
 
 

Tiki

The list climaxes with our ‘Tiki’ selection: a venture into Tiki cocktail culture with a Zeta twist. We feature some classics as well as some original Tiki recipes created by our mixologists in decadent Zeta style.

an equal measure of both pampero seleccion 1938 and havana club blanco, finely balanced with freshly squeezed lime, fixed with orange curacao, rock candy syrup and a touch of orgeat

a 1940’s Trader Vic classic and morse code for victory, it was created when the Japanese surrendered the second world war.
